A flavorful Moroccan-style lamb tagine cooked with oranges, aromatic spices, and fresh mint. Can also be prepared with rabbit meat.

Ingredients

  • 1 kg lamb (shoulder or hip)
  • 1 whole onion
  • 3 tablespoon olive oil
  • 1/4 liter orange juice
  • 3 whole oranges
  • 1/2 teaspoon ground cinnamon
  • 1 to taste salt
  • 1 to taste black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 to taste mint leaves

Directions

  1. 1Wash the lamb, pat dry and cut into large pieces. Peel and finely chop the onion.
  2. 2Heat olive oil in a tagine or Dutch oven and sauté the onion. Add the meat pieces and brown on all sides. Pour in the orange juice.
  3. 3Peel the oranges and cut the fruit flesh into pieces, add to the meat. Season with cinnamon, salt, pepper, cumin and coriander. Braise the tagine for about 1.5-2 hours. Finally, wash the mint leaves and sprinkle over the tagine.
