A flavorful Moroccan-style lamb tagine cooked with oranges, aromatic spices, and fresh mint. Can also be prepared with rabbit meat.
Ingredients
- 1 kg lamb (shoulder or hip)
- 1 whole onion
- 3 tablespoon olive oil
- 1/4 liter orange juice
- 3 whole oranges
- 1/2 teaspoon ground cinnamon
- 1 to taste salt
- 1 to taste black pepper
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 to taste mint leaves
Directions
- 1Wash the lamb, pat dry and cut into large pieces. Peel and finely chop the onion.
- 2Heat olive oil in a tagine or Dutch oven and sauté the onion. Add the meat pieces and brown on all sides. Pour in the orange juice.
- 3Peel the oranges and cut the fruit flesh into pieces, add to the meat. Season with cinnamon, salt, pepper, cumin and coriander. Braise the tagine for about 1.5-2 hours. Finally, wash the mint leaves and sprinkle over the tagine.
