
Ingredients
- 4 cups shredded carrots (about 2 large or 3 medium)
- 2 tablespoons finely diced onion or chives
- 2 tablespoons finely chopped fresh parsley
- 2 tablespoons oil (vegetable, olive or a mix)
- 2 tablespoons lemon juice
- 1 teaspoons honey
- 1 teaspoon Dijon mustard
- ½ teaspoon ground cumin
- ¼ teaspoon fine sea salt

- 1Prepare the carrots. My preferred method is to make matchsticks using a mandoline, but you can also grate them using a box grater.
- 2Place the carrots in a large mixing bowl. Add the rest of the vegetables and herbs and mix well..
- 3To make the dressing, whisk all of the ingredients together in a small bowl until completely blended.
- 4Pour the dressing over the carrot mixture and stir until the mixture is evenly coated in dressing. For best flavor, allow the salad to marinate for 20 minutes before serving. Toss again before serving. This salad keeps well in the refrigerator, covered, for about 4 days.
