
A relatively healthy combination of eggs and cottage cheese. It is easy to make, but does take a little planning since it takes a while to bake.
Ingredients
- Nonstick cooking spray
- 2 large eggs
- 2 tablespoons cottage cheese
- 2 tablespoons (a big pinch) shredded cheese. Use whatever you like.
Directions
- 1Heat the oven to 325F.
- 2Place the eggs, cottage cheese, and shredded cheese in a bowl. Beat well.
- 3Spray a ramekin with non-stick cooking spray.
- 4Add any mix-ins to the ramekin (if using, see note). Pour the egg over the mix-ins.
- 5Bake for 25 minutes, until the egg bites have set. Remove from oven and let sit for about 2 minutes.
- 6Run a knife around the edge of the ramekin to loosen the egg. Put a plate on top of the ramekin and flip over. Shake to loosen the egg.
- 7Serve. You can garnish with chopped fresh herbs if you want to be fancy.
Notes
- You can add chopped vegetables, fresh or sauteed, crumbled bacon, chopped ham or anything else you like before cooking the eggs.
