
This recipe is just a guideline. You can use whatever vegetables you like.
Ingredients
- 1/2 head of cabbage, shredded
- 2 carrots peeled and shredded
- 1/2 red onion shredded
- 1/2 red pepper shredded
- 1/4 cup finely chopped parsley
- 1/2 teaspoon salt
- (Optional) 1/2 Anaheim or Poblano pepper finely diced
- 1/2 cup mayonnaise
- 1 tablespoon dijon mustard
- 2 tablespoons cider or white white vinegar
- 1 teaspoon sugar
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon celery seed

Directions
- 1Mix cabbage and 1/2 teaspoon salt in a large mixing bowl. Let sit while you prepare the rest of the veggies and the sauce.
- 2For the dressing whisk together the mayonnaise, mustard, vinegar, sugar, celery seeds, and pepper in a small bowl.
- 3Mix all the veggies with the cabbage.
- 4Add about 2/3 of the dressing to the veggies and mix the dressing into the veggies. Add more of the dressing, as needed, and mix well. Depending on your preferences you may not need all of the dressing.
- 5Chill for at least a few hours.
