Asparagus in Puff Pastry with Salmon

The asparagus season is unfortunately coming to an end now.

Ingredients

  • 1 package puff pastry
  • 500 grams asparagus
  • 200 grams smoked salmon
  • 1 bunch fresh dill
  • 200 grams cream cheese
  • Some Sour Cream
  • 1 whole lemon
  • 1 whole egg
  • 1 pinch salt
  • 1 pinch pepper

Directions

  1. 1Preheat the oven to 200°C (400°F).
  2. 2Peel the asparagus and cut off the woody ends.
  3. 3Blanch the asparagus in salted boiling water for 3-4 minutes, then drain and let cool.
  4. 4Roll out the puff pastry and cut into rectangles.
  5. 5Mix the cream cheese with chopped dill, lemon zest, salt, and pepper.
  6. 6Spread the cream cheese mixture on the puff pastry rectangles.
  7. 7Place the asparagus and smoked salmon on top. Add 1/2 teaspoon sour cream.
  8. 8Fold the puff pastry over and seal the edges.
  9. 9Brush with beaten egg and add some fresh dill.
  10. 10Bake in the preheated oven for 20-25 minutes until golden brown.
  11. 11Serve warm.
